Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 0.333 cup all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 3 large carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 cup frozen peas
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

In a large bowl, combine the flour, salt, and pepper. Toss the beef cubes in the flour mixture until well-coated.

Step 2

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Brown the coated beef in batches, ensuring not to overcrowd the pot. Remove the beef and set it aside.

Step 3

Add the diced onion to the pot and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1-2 minutes.

Step 4

Return the browned beef to the pot. Add the carrots, celery, and potatoes. Pour in the beef broth, tomato paste, Worcestershire sauce, thyme, and bay leaves. Stir well to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low and cover. Simmer the stew for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the vegetables are cooked through.

Step 6

Add the frozen peas in the last 10 minutes of cooking.

Step 7

To thicken the stew, mix the cornstarch and water in a small bowl to form a slurry. Gradually stir the slurry into the stew and allow it to simmer for an additional 5 minutes, until the stew thickens to your desired consistency.

Step 8

Remove the bay leaves and serve hot, or cool completely before portioning into freezer-safe containers for OAMC. Reheat as needed.
