  • 15 ounces canned black beans, drained and rinsed
  • 2 cups cooked white rice
  • 1 cup shredded cheddar cheese
  • 6 tortillas large flour tortillas
  • 0.5 cup salsa
  • 0.5 cup sour cream
  • 0.25 cup chopped fresh cilantro

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the chopped onion and garlic to the skillet, and cook until the onion is translucent, about 4 minutes.

Step 3

Increase the heat to medium-high and add the ground beef. Cook until the beef is browned, breaking it up with a wooden spoon, about 6-8 minutes.

Drain excess fat from the skillet and reduce heat to medium.
