Ingredients

  • 1 large Cucumber
  • 3 medium Tomatoes
  • 1 medium Green bell pepper
  • 1 small Red onion
  • 0.5 cup Kalamata olives
  • 200 grams Feta cheese
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by washing all the fresh vegetables thoroughly under cold running water. Pat them dry with a clean towel or kitchen paper.

Cut the cucumber lengthwise, then slice it into half-moons about 1/4 inch thick. If the cucumber is waxy, you may want to peel it first.

Chop the tomatoes into wedges. If using cherry or grape tomatoes, simply halve them.
