Ingredients

  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 125 grams unsalted butter
  • 100 grams white sugar
  • 50 grams brown sugar
  • 3 tablespoons golden syrup
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking powder, ground ginger, ground cinnamon, and salt. Set aside.

Step 3

In a separate large bowl, cream the unsalted butter, white sugar, and brown sugar together using an electric mixer on medium speed until the mixture is light and fluffy, about 2-3 minutes.

Step 4

Stir in the golden syrup and mix until well combined.

Step 5

In a small bowl, dissolve the baking soda in the boiling water.

Step 6

Add the dissolved baking soda to the butter-sugar mixture and mix well.

Step 7

Gradually incorporate the sifted dry ingredients into the wet ingredients, mixing with a spoon until the dough comes together.

Step 8

Using your hands, shape walnut-sized portions of the dough into balls and place them on the prepared baking trays. Ensure they are spaced apart to allow for spreading during baking.

Step 9

Gently flatten each dough ball with the back of a spoon.

Step 10

Bake in the preheated oven for 10-12 minutes or until the biscuits are golden brown.

Step 11

Allow the biscuits to cool on the baking trays for a few minutes before transferring them to a wire rack to cool completely.

Step 12

Store the ginger biscuits in an airtight container to maintain their crispness.
