Ingredients

  • 250 grams All-purpose flour
  • 125 grams Unsalted butter (cold, cubed)
  • 75 grams Powdered sugar
  • 2 pieces Egg yolks
  • 2 tablespoons Water (cold)
  • 120 milliliters Fresh lemon juice
  • 1 tablespoon Lemon zest (grated)
  • 150 grams Granulated sugar
  • 3 pieces Eggs (large)
  • 120 milliliters Heavy cream
  • 30 grams Butter (softened)
  • 1 tablespoon Powdered sugar (for garnish, optional)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

To make the pâte sucrée crust, combine the all-purpose flour and powdered sugar in a large bowl. Add the cold, cubed butter and rub the mixture with your fingertips until it resembles coarse crumbs.

Step 3

Add the egg yolks and 2 tablespoons of cold water. Mix gently until the dough comes together. Avoid overmixing.

Step 4

Flatten the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
