Directions

Step 1

Crack the eggs into a mixing bowl and add a pinch of salt and pepper. Whisk vigorously with a fork or whisk until the mixture is completely homogenous and pale yellow.

Heat a non-stick skillet over medium-low heat and add 1 tablespoon of butter. Swirl the pan to coat it evenly with butter as it melts. Be careful not to brown the butter.
