  • 8 cups Water
  • 2 cups Ice cubes

Directions

Step 1

Peel the potatoes and cut them into evenly sized strips about 1/4 inch thick. Aim for uniform sizes for even cooking.

Step 2

Place the sliced potatoes into a large bowl, cover them with 8 cups of water, and add 2 cups of ice cubes. Let the potatoes soak for at least 30 minutes, or up to 1 hour, to remove excess starch and promote crispiness.

Step 3

Drain the potatoes and pat them completely dry using a clean kitchen towel. This step is crucial to prevent oil splatters when frying.

Step 4

Heat the vegetable oil in a heavy-bottomed pot or deep fryer to 325°F (163°C). While the oil heats, line a baking sheet with paper towels to drain the fries after frying.

Step 5

Working in batches, carefully lower a handful of the dried potatoes into the oil. Fry for 3–4 minutes until they are faintly golden but not browned, then remove and place on the paper-towel-lined baking sheet. Repeat until all the fries have undergone the first fry.
