  • 2.5 pounds beef chuck roast
  • 1 tablespoon kosher salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 2 bay leaves
  • 6 French rolls
  • 6 Swiss cheese slices

Directions

Step 1

Season the beef chuck roast generously with kosher salt and ground black pepper on all sides.

Step 2

In a large skillet over medium-high heat, add olive oil. Once heated, sear the beef chuck roast on all sides until browned. This should take about 8-10 minutes. Set aside.

Step 3

In the same skillet, add the thinly sliced onion and cook until translucent and caramelized, about 5 minutes. Add the minced garlic and cook for another 30 seconds.

Transfer the seared beef, onions, and garlic into a slow cooker. Add beef broth, soy sauce, Worcestershire sauce, balsamic vinegar, and bay leaves to the slow cooker. Stir to combine.
