Ingredients

  • 250 grams all-purpose flour
  • 125 grams unsalted butter
  • 100 grams granulated sugar
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 4 medium apples (Granny Smith or similar)
  • 2 tablespoons lemon juice
  • 4 tablespoons apricot preserves
  • 0.5 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 2 tablespoons caster sugar

Directions

Step 1

Start by making the tart crust. In a bowl, combine 250 grams of all-purpose flour, 100 grams of granulated sugar, and 0.5 teaspoon of salt.

Step 2

Cut 125 grams of unsalted butter into small cubes and mix into the dry ingredients with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Step 3

Add 1 large egg yolk and 2 tablespoons of cold water to the mixture. Stir until the dough begins to come together.

Step 4

Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

Remove the dough from the refrigerator and roll it out on a floured surface to fit a 9-inch (23 cm) tart pan. Press the dough into the pan and trim the edges.

Step 7

Peel and core 4 medium apples. Cut them into thin slices about 1/8 inch thick.

Step 8

In a large bowl, toss the apple slices with 2 tablespoons of lemon juice and 0.5 teaspoon of cinnamon.

Step 9

Arrange the apple slices in a concentric pattern over the crust, starting from the outer edge and working your way in.

Step 10

Sprinkle 2 tablespoons of caster sugar evenly over the apples.

Step 11

Bake the tart in the preheated oven for about 40-50 minutes, or until the apples are tender and the crust is golden brown.

Step 12

While the tart is baking, heat 4 tablespoons of apricot preserves in a small saucepan until melted and smooth.

Step 13

Once the tart is done, remove it from the oven and brush the apple slices with the melted apricot preserves for a beautiful glossy finish.

Step 14

Allow the apple tart to cool slightly before serving. Enjoy it warm or at room temperature.
