Start by making the tart crust. In a bowl, combine 250 grams of all-purpose flour, 100 grams of granulated sugar, and 0.5 teaspoon of salt.
Cut 125 grams of unsalted butter into small cubes and mix into the dry ingredients with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
Add 1 large egg yolk and 2 tablespoons of cold water to the mixture. Stir until the dough begins to come together.
Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat your oven to 375°F (190°C).
