Ingredients

  • 100 grams unsalted butter
  • 50 grams almond meal
  • 40 grams all-purpose flour
  • 120 grams confectioners' sugar
  • 4 large egg whites
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a financier mold or mini muffin pan.

Step 2

In a small saucepan, melt the butter over medium heat. Continue cooking until it turns a light brown color and emits a nutty aroma, forming what is known as beurre noisette. Be careful not to burn the butter. Once done, remove from heat and let it cool slightly.

Step 3

In a medium bowl, sift together the almond meal, flour, and confectioners’ sugar.

Step 4

In a separate bowl, whisk the egg whites until they are frothy. This does not require stiff peaks, just a bit of aeration to incorporate into the dry mixture.

Step 5

Gently fold the egg whites into the dry ingredients, followed by adding the vanilla extract and salt. Mix until well combined.

Slowly incorporate the slightly cooled brown butter into the batter, gently mixing until smooth and everything is well incorporated.

Step 7

Spoon the batter into the prepared molds, filling each cavity about 3/4 full to allow room for the financiers to rise.

Bake in the preheated oven for about 12-15 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.

Step 9

Once baked, remove the financiers from the oven and let them cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely.

Step 10

Serve at room temperature as a delightful treat with coffee or tea.
