Directions

Step 1

In a large mixing bowl, combine the rice flour, baking powder, sugar, and salt. Mix well until all dry ingredients are evenly distributed.

In another bowl or measuring cup, combine the coconut milk, water, and vanilla extract. Mix until well blended.

Step 3

Slowly pour the wet ingredients into the dry ingredients, stirring continuously to avoid lumps. Mix until a smooth batter forms.

Optional: If you prefer your puto with small cheese bits inside, you can mix in small pieces of cheese into the batter.

Prepare the steamer by bringing water to a boil. While waiting, lightly grease the individual molds or muffin cups with oil.
