Ingredients

  • 400 grams pitted dates
  • 240 ml water
  • 1 teaspoon vanilla extract
  • 190 grams all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 150 grams rolled oats
  • 150 grams brown sugar
  • 170 grams unsalted butter

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line a 9x9 inch (23x23 cm) baking dish with parchment paper, leaving an overhang on the sides for easy removal.

Step 2

In a medium saucepan, combine the pitted dates and water over medium heat. Cook, stirring occasionally, until the dates are soft and have absorbed most of the water, about 10 minutes. Remove from heat and stir in the vanilla extract. Set aside to cool slightly.

Step 3

In a large bowl, whisk together the flour, baking soda, and salt. Add the oats and brown sugar, mixing until well combined.

Step 4

Melt the butter in a small saucepan or microwave-safe bowl, then pour over the dry ingredients. Mix until the mixture is crumbly and well-combined.

Step 5

Press half of the oat mixture firmly into the prepared baking dish to form the crust.

Spread the date mixture evenly over the crust layer.
