  • 1 vanilla bean
  • 4 egg yolks
  • 100 grams granulated sugar

Step 1

Pour the milk into a medium saucepan.

Split the vanilla bean lengthwise and scrape out the seeds using a knife. Add both seeds and pod to the milk.

Heat the milk over medium heat until it begins to steam, but do not let it boil.

Meanwhile, in a mixing bowl, whisk together the egg yolks, granulated sugar, and cornstarch until light and creamy.

Once the milk is steaming, remove it from heat and gradually pour it into the egg yolk mixture, whisking continuously to temper the yolks.

Return the combined mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon or spatula, until the sauce thickens enough to coat the back of the spoon, about 5 to 7 minutes.
