  • 6 slices bacon
  • 1 cup mushrooms
  • 1 cup cherry tomatoes

  • 4 slices bread
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon parsley (optional, for garnish)

Directions

Step 1

Preheat a large non-stick skillet over medium heat.

Step 2

Add the bacon slices to the skillet and cook for 4-6 minutes per side, depending on desired crispness. Once cooked, transfer the bacon to a plate lined with paper towels to drain excess grease.

Step 3

In the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Add 1 tablespoon of butter and heat until melted. Add the mushrooms and sauté for 5 minutes until tender and golden brown. Season with a pinch of salt and black pepper, then transfer to a small bowl and set aside.

Step 4

Reduce the heat to medium-low. Add 1 tablespoon of olive oil to the skillet, then place the cherry tomatoes in the pan. Cook for 3-4 minutes, shaking the pan occasionally, until the skin begins to blister. Remove from the pan and set aside.
