Ingredients

  • 8 cups (crumbled) cornbread
  • 1 cup butter
  • 2 medium (diced) yellow onion
  • 4 whole (diced) celery stalks
  • 4 cups chicken broth
  • 2 whole eggs
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup (chopped) fresh parsley
  • 1 for greasing dish cooking spray or butter

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter and set aside.

Step 2

Crumble the cornbread into a large mixing bowl, breaking it into small, even pieces.

Step 3

In a large skillet, melt the butter over medium heat. Add the diced onions and celery, and sauté for 5-7 minutes until softened and translucent. Remove from heat.

Step 4

Add the cooked onions and celery to the bowl of crumbled cornbread. Mix gently to combine.

Step 5

In a separate bowl, whisk the eggs. Then whisk in the chicken broth, sage, thyme, salt, and black pepper until well combined.

Step 6

Pour the egg and broth mixture over the cornbread mixture. Gently stir until the cornbread absorbs the liquid and the mixture is well incorporated.

Step 7

Fold in the chopped fresh parsley evenly throughout the mixture.

Step 8

Transfer the mixture into the prepared baking dish, spreading it into an even layer.

Step 9

Bake in the preheated oven for 40-45 minutes, or until the top is lightly golden and the dressing is set in the center.

Step 10

Remove from the oven and allow it to cool for 10 minutes before serving.
