Ingredients

  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 6 pieces Large eggs
  • 0.75 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cinnamon
  • 0.125 teaspoon Salt
  • 0.5 cup Dark rum or bourbon (optional)

Directions

Step 1

In a medium saucepan, combine the milk, heavy cream, ground nutmeg, ground cinnamon, and salt. Place the saucepan over medium heat and bring the mixture to just below a simmer, stirring occasionally.

Step 2

In a large mixing bowl, whisk together the eggs and granulated sugar until the mixture is pale and slightly thickened, about 2 minutes.

Step 3

Once the milk mixture is hot but not boiling, slowly pour about 1/2 cup of the hot milk into the egg mixture, whisking constantly to temper the eggs. This prevents the eggs from curdling.

Step 4

Gradually add the tempered egg mixture back into the saucepan with the remaining milk mixture, whisking constantly.
