Ingredients

  • 240 ml Whole milk
  • 50 g Granulated sugar
  • 85 g Unsalted butter
  • 2.25 tsp Active dry yeast
  • 2 large Eggs
  • 500 g All-purpose flour
  • 1 tsp Salt
  • 150 g Brown sugar
  • 2 tbsp Ground cinnamon
  • 60 g Unsalted butter (for filling)
  • 115 g Cream cheese
  • 120 g Powdered sugar
  • 1 tsp Vanilla extract
  • 15 ml Whole milk (for frosting)

Directions

Step 1

Warm 240ml of milk in a small saucepan over low heat until lukewarm (not boiling). Pour the warm milk into a large mixing bowl.

Step 2

Add 50g of granulated sugar and 2.25 tsp active dry yeast to the milk. Stir gently and let it sit for 5-10 minutes until frothy, indicating the yeast is activated.

Step 3

Melt 85g of butter and let it cool slightly. Add the melted butter, 2 large eggs, and 1 tsp salt to the yeast mixture. Mix until combined.

Step 4

Gradually mix in 500g of all-purpose flour, 1 cup at a time, until a soft dough forms. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.

Step 5

Place the dough in a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 1-2 hours or until doubled in size.

Step 6

In a small bowl, mix 150g of brown sugar and 2 tbsp of ground cinnamon. Melt 60g of butter for the filling and set aside.

Once the dough has risen, roll it out on a floured surface into a large rectangle approximately 16x12 inches.

Brush the melted butter over the rolled-out dough and evenly sprinkle the cinnamon-sugar mixture on top.

Starting from one of the long edges, tightly roll the dough into a log. Use a sharp knife to cut the log into 12 equal slices.

Place the cinnamon roll slices into a greased 9x13-inch baking dish, leaving a little space between them. Cover the dish with a towel and let the rolls rise again for about 30-45 minutes.

Step 11

Preheat your oven to 175°C (350°F). Bake the cinnamon buns for 20-25 minutes, or until golden brown.

While the buns are baking, make the frosting. In a mixing bowl, beat 115g of cream cheese, 120g of powdered sugar, 1 tsp vanilla extract, and 15ml of milk until smooth and creamy.

Step 13

Once the cinnamon buns are finished baking, let them cool slightly before spreading the cream cheese frosting generously over the top.
