Ingredients

  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 0.5 small Red onion
  • 1 large Carrot
  • 5 small Radishes
  • 0.5 cup Feta cheese
  • 0.25 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash and dry the romaine lettuce. Chop into bite-sized pieces and place in a large salad bowl.

Step 2

Cut the cherry tomatoes in half and add them to the salad bowl.

Step 3

Peel the cucumber, cut it in half lengthwise, scoop out any seeds with a spoon, and slice into thin half-moons. Add to the bowl.

Core and dice the red bell pepper into small strips or cubes and mix with the other ingredients in the bowl.
