Ingredients

  • 200 grams dark chocolate (70% cocoa)
  • 30 grams unsalted butter
  • 3 pieces large eggs, separated
  • 50 grams caster sugar
  • 200 milliliters heavy cream
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Directions

Step 1

Chop the dark chocolate into small pieces and place them in a heatproof bowl along with the unsalted butter.

Step 2

Set the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Stir occasionally until the chocolate and butter have completely melted and are smooth. Remove from heat and set aside to cool slightly.

In a medium-sized bowl, whisk the egg yolks with half of the caster sugar (25 grams) until the mixture becomes pale and thick.
