  • 2 pieces boneless, skinless chicken breasts
  • 4 tablespoons butter
  • 1 medium, diced yellow onion
  • 2 medium, diced carrots
  • 2 diced celery stalks
  • 0.333 cup all-purpose flour
  • 2 cups chicken broth
  • 0.5 cup heavy cream
  • 1 cup frozen peas
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from the pot and set aside to cool.

In the same pot, add the butter and melt over medium heat. Add the diced onions, carrots, and celery to the melted butter. Cook until the vegetables are tender, about 5-7 minutes.
