  • 8 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the chopped onion, sliced carrots, and celery to the pot. Sauté for about 5-7 minutes until the vegetables begin to soften.
