  • 0.75 cup Granulated sugar (for filling)
  • 3 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Unsalted butter, cubed
  • 1 large Egg yolk
  • 1 tablespoon Water (for egg wash)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt.

Step 2

Using a pastry cutter or your fingers, cut the cold, cubed butter into the flour mixture until it resembles coarse crumbs.

Step 3

Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overwork the dough.

Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preheat your oven to 375°F (190°C).

In a small bowl, whisk together the egg yolk and water to make an egg wash. Brush the top crust with the egg wash.

Place the pie on a baking sheet to catch any drips, and bake in the preheated oven for 50-55 minutes, or until the crust is golden brown and the filling is bubbling.
