Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 0.5 cup water
  • 4 units large eggs
  • 2 tablespoons butter, melted
  • 0.25 teaspoon salt
  • 1 cup ricotta cheese
  • 4 ounces cream cheese, softened
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter for frying

Directions

Step 1

In a large mixing bowl, whisk together the flour, milk, water, eggs, melted butter, and salt until smooth to make the batter. It should have a consistency slightly thinner than heavy cream. Let the batter rest for 15-30 minutes.

Step 2

While the batter is resting, prepare the cheese filling. In a separate bowl, combine ricotta cheese, cream cheese, sugar, and vanilla extract. Mix until smooth and creamy.

Heat a non-stick skillet or crepe pan over medium heat and lightly grease with butter.
