Ingredients

  • 200 grams Granulated sugar
  • 90 grams Unsalted butter
  • 120 milliliters Heavy cream
  • 1 pinch Salt (optional)

Directions

Step 1

In a medium-sized, heavy-bottomed saucepan, pour the granulated sugar and spread it evenly over the bottom of the pan.

Step 2

Heat the sugar over medium heat without stirring. As it begins to melt, use a heatproof spatula or wooden spoon to gently push the liquefied sugar around to prevent it from burning.

Step 3

Once the sugar has completely melted and reached a rich amber color, immediately reduce the heat to low.

Step 4

Carefully add the unsalted butter to the pan, stirring constantly. The mixture will bubble vigorously, so be cautious.

Step 5

When the butter has fully incorporated, slowly pour in the heavy cream while continuing to stir. The bubbling will intensify, but it will subside as the ingredients combine.

Step 6

Remove the saucepan from the heat and stir in a pinch of salt, if desired, for a salted caramel flavor.

Step 7

Allow the caramel sauce to cool slightly in the pan before transferring it to a heatproof jar or container.

Step 8

The sauce will thicken as it cools. Store it in the refrigerator for up to two weeks and gently reheat before using, if necessary.
