  • 240 grams All-purpose flour
  • 170 grams Unsalted butter
  • 1 teaspoon Salt
  • 60 milliliters Cold water
  • 160 grams Brown sugar
  • 120 milliliters Golden syrup or corn syrup
  • 2 large Eggs
  • 30 grams Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 80 grams Raisins (optional)

Directions

Step 1

For the pastry, in a large bowl, combine flour and salt. Using a pastry cutter or fingertips, cut in 170 grams of cold unsalted butter until the mixture resembles coarse crumbs.

Step 2

Gradually add cold water, one tablespoon at a time, mixing with a fork until the dough comes together.

Step 3

Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat your oven to 190°C (375°F).

On a lightly floured surface, roll out the pastry dough to about 3 mm thickness.
