Ingredients

  • 4 pounds Beef brisket
  • 2 tablespoons Olive oil
  • 1.5 teaspoons Kosher salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Smoked paprika (optional)
  • 1 cup Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 large Yellow onion, sliced
  • 3 cloves Garlic cloves, minced
  • 3 sprigs Fresh thyme sprigs
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Trim excess fat from the brisket if necessary, but leave a thin layer for flavor and moisture.

Step 2

In a small bowl, mix together kosher salt, black pepper, paprika, garlic powder, onion powder, and smoked paprika (if using).

Step 3

Rub the spice mixture generously all over the brisket, pressing the seasoning into the meat.

Step 4

Heat the olive oil in a large skillet over medium-high heat. Sear the brisket for 2-3 minutes on each side until a crust forms. Transfer the brisket to your crock pot.

Step 5

In the same skillet, sauté the sliced onions and minced garlic for 2-3 minutes until fragrant. Add them to the crock pot, spreading them around and on top of the brisket.

Step 6

Deglaze the skillet by pouring in beef broth and Worcestershire sauce, scraping up any browned bits with a wooden spoon. Pour this liquid over the brisket in the crock pot.

Step 7

Add the fresh thyme sprigs around the brisket for added aroma and flavor.

Step 8

Cover the crock pot with the lid and set it to low. Cook for 8 hours, or until the brisket is very tender and easily pulls apart with a fork.

Step 9

Once cooked, carefully remove the brisket from the crock pot and let it rest on a cutting board for 10-15 minutes before slicing against the grain.

Step 10

Strain the cooking liquid to remove the thyme sprigs, reserving the onions and any juices. Optionally, you can reduce the liquid in a saucepan over medium heat to create a richer sauce.

Step 11

Serve the sliced brisket with the onions and cooking liquid spooned over the top. Garnish with freshly chopped parsley for a bright, fresh finish.
