Ingredients

  • 1.5 cups Wheat bran
  • 1 cup Buttermilk
  • 1 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Brown sugar, packed
  • 1 large Egg
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins or chopped dates (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease each cup.

Step 2

In a large mixing bowl, combine the wheat bran and buttermilk. Let the mixture sit for 10 minutes to soften the bran.

Step 3

In another bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set aside.

To the softened bran mixture, add the brown sugar, egg, vegetable oil, and vanilla extract. Stir until well combined.
