Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, softened
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 0.75 cups whole milk
  • 1.5 cups fresh blueberries
  • 1 teaspoon lemon zest
  • 2 tablespoons powdered sugar for dusting (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, using an electric mixer, cream the softened butter and granulated sugar until light and fluffy, about 3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and lemon zest.

Step 5

Gradually add the flour mixture to the butter mixture alternately with the milk, beginning and ending with flour. Mix until just combined.

Step 6

Gently fold in the fresh blueberries with a spatula, being careful not to squish them.

Step 7

Pour the batter into the prepared cake pan, smoothing the top with a spatula.

Step 8

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Allow the cake to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Step 10

If desired, dust the cooled cake with powdered sugar before serving.
