Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
Gradually add the flour mixture to the butter mixture in three parts, alternating with the milk. Begin and end with the flour mixture. Mix until just combined.
Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Remove the cakes from the oven and allow to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
While the cakes are cooling, prepare the vanilla buttercream icing. In a large bowl, beat the softened butter with an electric mixer on medium speed until creamy.
Gradually add the powdered sugar, about 1 cup at a time, mixing on low speed until fully incorporated.
Add the vanilla extract and heavy cream, and beat at medium-high speed until the buttercream is light and fluffy, about 2-3 minutes.
If desired, add food coloring to the buttercream and mix until evenly distributed.
Once the cakes are completely cool, spread a layer of buttercream on top of one cake layer. Place the second layer on top and frost the top and sides of the cake with the remaining buttercream.
