Ingredients

  • 4 medium beets
  • 2 tablespoons olive oil
  • 1 large onion
  • 3 garlic cloves
  • 1 medium carrot
  • 2 celery stalks
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoons fresh dill
  • 0.5 cup sour cream

Directions

Step 1

Peel and chop the beets into small cubes. Set aside.

Step 2

Heat the olive oil in a large pot over medium heat.

Step 3

Dice the onion, mince the garlic, and add both to the pot. Sauté until the onion becomes translucent, about 5 minutes.

Step 4

Chop the carrot and celery into small pieces and add them to the pot. Cook for another 5 minutes, stirring occasionally.

Step 5

Add the cubed beets to the pot. Stir well to combine with the other vegetables.

Step 6

Pour in the vegetable broth and add the bay leaf. Season with salt and pepper.

Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, or until the beets are tender.

Remove the bay leaf and use an immersion blender to puree the soup until it's smooth. Alternatively, you can carefully blend the soup in batches using a countertop blender.
