  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 28 ounces canned diced tomatoes
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 cups beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon sugar
  • 0.25 teaspoon cayenne pepper
  • 1 bay leaf

Directions

Step 1

Heat olive oil in a large pot over medium-high heat.

Step 2

Add ground beef and cook until browned, breaking it up into small pieces with a spatula, about 6-8 minutes.

Remove beef with a slotted spoon and set aside. Drain excess fat, leaving about 1 tablespoon in the pot.

Add diced onion, red bell pepper, and green bell pepper to the pot. Cook until softened, about 5 minutes.
