  • 0.25 pound pancetta or bacon, finely chopped
  • 2 tablespoons tomato paste
  • 28 ounces canned crushed tomatoes
  • 1 cup dry white wine
  • 1 cup beef stock
  • 1 cup whole milk
  • 1 piece bay leaf
  • 1 teaspoon fresh thyme, finely chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil and butter in a large, heavy-bottomed pot over medium heat.

Add the finely chopped onion, carrot, and celery. Cook, stirring occasionally, until the vegetables are soft and translucent, about 8-10 minutes.
