Ingredients

  • 4 slices bacon
  • 2 large eggs
  • 2 slices cheddar cheese
  • 2 slices bread
  • 1 tablespoon butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat a nonstick skillet over medium heat. Add the bacon slices and cook until crisp, about 8-10 minutes, turning occasionally. Once cooked, remove the bacon and drain on paper towels.

In the same skillet with the bacon drippings removed, melt butter over medium-low heat.

Step 3

Crack the eggs into a small bowl, add salt and pepper, and whisk until well combined.

Pour the eggs into the skillet and allow to cook undisturbed for about 2 minutes or until the edges are set. Gently stir with a spatula and continue to cook until they are scrambled and cooked through, about another 2 minutes. Transfer scrambled eggs to a plate.

Using the same skillet, toast the bread slices on one side for about 1 minute until golden brown.

On the untoasted side of one bread slice, place a slice of cheese, top it with scrambled eggs, followed by bacon slices, and another slice of cheese. Cover with the second slice of bread, toasted side facing out.

Cook the sandwich in the skillet over medium heat. Press gently with the spatula and cook each side for about 2-3 minutes until the cheese is melted and the bread is golden brown.

Remove from the skillet, slice the sandwich in half, and serve immediately.
