  • 2.5 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 cup Unsalted butter, chilled and diced

  • 2 tablespoons Lemon juice
  • 2 tablespoons All-purpose flour
  • 1 large Egg yolk
  • 1 tablespoon Milk

Directions

Step 1

In a large bowl, combine 2 1/2 cups of flour and 1 teaspoon of salt.

Add the diced butter into the bowl and using a pastry cutter or your fingers, mix the flour and butter until the mixture resembles coarse crumbs.

Gradually add the ice water, 1 tablespoon at a time, mixing with a fork until the dough holds together when pressed. Be careful not to add too much water.

Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
