Ingredients

  • 1.25 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons granulated sugar
  • 0.25 teaspoon salt
  • 1.25 cups milk
  • 1 whole large egg
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • 1 as needed butter or oil for cooking

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and salt until well combined.

Step 2

In a separate medium-sized bowl, beat together the milk, egg, melted butter, and vanilla extract.

Step 3

Pour the wet ingredients into the dry ingredients and gently stir with a spatula or whisk until just combined. The batter will be slightly lumpy, which is fine. Do not overmix.

Step 4

Preheat a non-stick skillet or griddle over medium heat. Lightly grease the skillet with some butter or oil.

Step 5

Once the skillet is hot, use a ladle or measuring cup to pour approximately 1/4 cup of batter onto the skillet for each pancake.

Step 6

Cook the pancakes for about 2-3 minutes, until bubbles form on the surface and the edges begin to look set. Then, flip the pancakes and cook for an additional 1-2 minutes until golden brown on the other side.

Step 7

Remove the pancakes from the skillet and keep warm by covering them with a clean kitchen towel or placing them in a low oven.

Step 8

Repeat the process with the remaining batter, greasing the skillet as needed.

Step 9

Serve the pancakes warm with your choice of maple syrup, fresh fruits, or any other desired toppings.
