Ingredients

  • 250 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 150 grams granulated sugar
  • 60 grams unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 120 grams whole almonds, toasted and coarsely chopped

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt; set aside.

Step 3

In a large bowl, combine granulated sugar and butter. Beat with an electric mixer on medium speed until light and fluffy, about 3 minutes.

Add eggs one at a time, beating well after each addition. Mix in the vanilla and almond extracts.

Gradually add the dry ingredients to the wet mixture, beating just until combined.

With a spatula, fold in the chopped almonds until evenly distributed.
