Ingredients

  • 1 piece pre-made pie crust
  • 5 large eggs
  • 1 cup heavy cream
  • 0.5 cup milk
  • 6 slices cooked bacon
  • 2 cups baby spinach
  • 1 cup shredded Gruyère cheese
  • 0.5 cup shredded cheddar cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.125 teaspoon nutmeg (optional)
  • 1 teaspoon olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Place the pre-made pie crust into a 9-inch pie dish and gently press it against the bottom and sides of the dish. Trim any excess dough hanging over the edges. Poke the bottom of the crust with a fork several times to prevent bubbling during baking.

Step 3

Blind bake the crust: Line the crust with parchment paper and fill it with pie weights or dried beans. Bake in the preheated oven for 10 minutes. Remove the weights and parchment paper, then bake for an additional 5 minutes. Set the crust aside to cool slightly.

Step 4

While the crust is baking, prepare the filling. Heat 1 teaspoon of olive oil in a skillet over medium heat. Add the baby spinach and sauté until wilted, about 2–3 minutes. Remove from heat and set aside.

Step 5

In a large mixing bowl, whisk together the eggs, heavy cream, milk, salt, black pepper, and nutmeg (if using) until well combined.

Step 6

Crumble the cooked bacon into small pieces and spread them evenly over the bottom of the crust. Add the sautéed spinach on top of the bacon. Sprinkle the shredded Gruyère and cheddar cheeses evenly over the spinach and bacon.

Step 7

Carefully pour the egg mixture over the fillings in the pie crust, ensuring it is evenly distributed.

Step 8

Place the quiche in the preheated oven and bake for 35–40 minutes, or until the center is set and the top is lightly golden. To check for doneness, insert a knife or toothpick into the center—if it comes out clean, the quiche is ready.

Step 9

Remove the quiche from the oven and let it cool for 10 minutes before slicing. Serve warm or at room temperature. Enjoy!
