Ingredients

  • 2 pounds fresh clams
  • 1 cup dry champagne
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 large shallot
  • 3 cloves garlic
  • 2 tablespoons (chopped) fresh parsley
  • 1 teaspoon (chopped) fresh thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 whole lemon
  • 1 loaf crusty bread

Directions

Step 1

Scrub the clams under cold running water and discard any that are cracked or do not close when tapped. Set them in a bowl of cold water with a tablespoon of salt for 20 minutes to purge sand. Drain and rinse before cooking.

Step 2

Finely chop the shallot and mince the garlic. Chop the parsley and thyme. Cut the lemon into wedges and set aside.

In a large pot with a lid, heat the olive oil and butter over medium heat until the butter is melted and bubbling.
