  • 2 lbs Fresh clams
  • 3 tbsp Olive oil

  • 0.5 cup Dry white wine
  • 0.5 cup Chicken or vegetable stock
  • 0.5 tsp Red pepper flakes
  • 1 tbsp Lemon juice
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 0.5 cup Parmesan cheese (optional), grated

Directions

Step 1

Bring a large pot of salted water to a boil, add the spaghetti, and cook until al dente according to the package instructions. Reserve 1 cup of pasta water before draining.

Step 2

Scrub the clams under cold running water to remove any sand or dirt. Discard any clams that are cracked or do not close when tapped lightly.

Step 3

In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
