Ingredients

  • 2 pounds fresh clams
  • 1 cup coconut milk
  • 1 cup vegetable stock
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 1 red bell pepper, diced
  • 3 scallions, sliced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 2 tablespoons cilantro, chopped
  • 1 scotch bonnet pepper, finely chopped
  • 1 teaspoon paprika
  • 0.5 teaspoons ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Rinse the clams thoroughly under cold water to remove any sand or debris.

Step 2

In a large pot or deep skillet, heat the olive oil over medium heat.

Step 3

Add the minced garlic, red bell pepper, scallions, and grated ginger to the pot. Sauté for 2-3 minutes, until fragrant and softened.

Step 4

Stir in the scotch bonnet pepper, paprika, ground cumin, salt, and black pepper. Cook for another minute to release the spices' aroma.

Step 5

Pour in the coconut milk and vegetable stock. Stir well and bring to a gentle simmer.

Step 6

Add the clams to the pot, cover with a lid, and allow them to steam for 5-7 minutes, or until all the clams have opened. Discard any clams that do not open.

Step 7

Remove the lid and stir in the lime juice and lime zest. Let the juices infuse for another minute.

Step 8

Sprinkle the chopped cilantro over the dish just before serving.

Step 9

Serve the Clams Calypso hot, with crusty bread or over steamed rice to soak up the flavorful broth.
