  • 400 g Spaghetti or Linguine
  • 1 kg Fresh clams
  • 3 tbsp Extra-virgin olive oil
  • 2 tbsp Unsalted butter
  • 3 Garlic cloves, minced
  • 1 Shallot, finely chopped
  • 250 ml Dry white wine
  • 2 tbsp Fresh parsley, chopped
  • 0.5 tsp Crushed red pepper flakes
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 1 Lemon wedges for serving

Directions

Step 1

Rinse the clams under cold running water and scrub the shells to remove any debris. Discard any clams that are cracked or do not close when tapped.

Step 2

In a large pot, bring salted water to a boil and cook the pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining.

Step 3

Heat the olive oil and butter in a large, deep skillet over medium heat. Once the butter is melted, add the minced garlic and chopped shallot. Sauté for 2-3 minutes, or until fragrant and translucent.

Add the red pepper flakes and stir for about 30 seconds to release their aroma.
