Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 medium bell peppers, diced (any color)
  • 4 cloves garlic cloves, minced
  • 1 pound ground beef (or ground turkey for a leaner option)
  • 28 ounces canned diced tomatoes
  • 15 ounces canned red kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 2 tablespoons canned tomato paste
  • 1 cup beef or chicken broth
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup shredded cheddar cheese (optional, for serving)
  • 0.25 cup sour cream (optional, for serving)
  • 0.25 cup sliced jalapeños (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and bell peppers, and sauté for 5-7 minutes until they begin to soften.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the ground beef to the pot and cook, breaking it apart with a wooden spoon, until browned and no longer pink, about 6-8 minutes. Drain any excess fat if needed.

Step 5

Stir in the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Cook for 1-2 minutes to toast the spices.

Step 6

Add the canned diced tomatoes, drained and rinsed beans, tomato paste, and broth. Stir well to combine.

Step 7

Bring the chili to a gentle boil, then reduce the heat to low. Cover and simmer for 30-40 minutes, stirring occasionally, to allow the flavors to meld together.

Step 8

Taste and adjust seasoning with additional salt or spices if needed.

Step 9

Serve the chili hot, garnished with fresh cilantro, shredded cheddar cheese, sour cream, or sliced jalapeños if desired. Enjoy with cornbread or tortilla chips on the side!
