Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Unsweetened cocoa powder
  • 2.5 cups Granulated sugar
  • 1 cup Brown sugar
  • 2 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 1 cup Buttermilk
  • 0.5 cup Vegetable oil
  • 3 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 cup Hot water
  • 1 cup Unsalted butter (softened)
  • 3.5 cups Powdered sugar
  • 3 tablespoons Heavy cream
  • 1.5 cups Chocolate chips (semi-sweet)
  • 1 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans and line the bottoms with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.

Step 3

In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing on low speed with an electric mixer until combined. Slowly pour in the hot water while mixing, and continue to mix until the batter is smooth.

Step 5

Divide the batter evenly among the three prepared cake pans. Smooth the tops with a spatula.

Step 6

Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 15 minutes, then turn out onto a wire rack to cool completely.

Step 7

To prepare the frosting, beat the softened butter in a large bowl until creamy. Gradually add the powdered sugar and cocoa powder while mixing at low speed. Add the heavy cream and vanilla extract, then increase the speed to medium and beat until fluffy.

Step 8

Spread a generous layer of frosting over the top of one cake layer, then sprinkle with a handful of chocolate chips and chopped walnuts (if using). Place the second cake layer on top and repeat. Add the third layer and frost the top and sides of the cake.

Step 9

Press additional chocolate chips and chopped walnuts (if desired) into the sides of the cake for decoration.

Step 10

Chill the cake in the refrigerator for at least 30 minutes to set the frosting before serving. Slice and enjoy!
