Ingredients

  • 1 large Mango (ripe, diced)
  • 1 cup Pineapple (peeled, cored, and diced)
  • 1 cup Passion fruit pulp (about 2 passion fruits)
  • 100 grams All-purpose flour
  • 100 grams Granulated sugar
  • 250 milliliters Milk
  • 100 milliliters Heavy cream
  • 3 pieces Eggs (large)
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Dark rum (optional)
  • 1 tablespoon Butter (to grease the pan)
  • 1 tablespoon Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch round baking dish or pie dish with the butter to prevent sticking.

Step 2

In a medium-sized mixing bowl, whisk together the flour and granulated sugar until well combined.

Step 3

Add the eggs to the dry ingredients and whisk until smooth. Gradually pour in the milk, followed by the heavy cream, whisking continuously to create a smooth batter.

Step 4

Stir in the vanilla extract and dark rum (if using). Continue whisking until the batter is free of lumps.

Step 5

Spread the diced mango, pineapple, and passion fruit pulp evenly across the bottom of the prepared baking dish.

Step 6

Carefully pour the batter over the fruit, ensuring the fruit is evenly distributed and submerged.

Step 7

Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the clafouti is set and lightly golden brown on top.

Step 8

Remove the clafouti from the oven and allow it to cool slightly. It will deflate a bit as it cools—this is normal.

Step 9

Dust the top with powdered sugar before serving. Serve warm or at room temperature for the best flavor.
