Preheat your oven to 350°F (175°C).
Thread the cubes of pork and veal alternately onto the wooden skewers, leaving a little space on each end of the skewer for easy handling.
Season the meat skewers evenly with salt, black pepper, and paprika.
Set up a breading station with three shallow bowls. Place the flour in the first bowl, whisk together the eggs and milk in the second bowl, and fill the third bowl with breadcrumbs.
Dredge each skewer in the flour, shaking off any excess. Dip it into the egg mixture, making sure it is fully coated, and finally roll it in the breadcrumbs to evenly coat all sides.
Heat the vegetable oil in a large skillet over medium heat. Once hot, fry the breaded skewers until golden brown on all sides, about 2-3 minutes per side. You may need to do this in batches to avoid overcrowding the pan.
Transfer the browned skewers into a baking dish in a single layer.
Pour the chicken broth into the baking dish, making sure the broth comes about 1/2 inch up the sides of the skewers. Dot the top of the skewers with small pats of butter.
Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 5-10 minutes, until the skewers are cooked through and the breadcrumbs are crispy.
Serve hot with your favorite sides, such as mashed potatoes or green beans. Enjoy!
