Ingredients

  • 4 pieces Rainbow trout fillets
  • 1 cup Walnuts
  • 0.5 cup Panko breadcrumbs
  • 1 tablespoon Orange zest
  • 1 teaspoon Lemon zest
  • 2 tablespoons Fresh parsley, chopped
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 1 tablespoon Honey
  • 1 tablespoon Fresh lemon juice
  • 1 as needed Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly coat with cooking spray.

Step 2

In a food processor, pulse the walnuts until they form small, coarse crumbs. Be careful not to over-process into a paste.

In a medium bowl, combine the chopped walnuts, panko breadcrumbs, orange zest, lemon zest, parsley, minced garlic, salt, and black pepper. Mix well.
