Ingredients

  • 12 oz thin spaghetti
  • 1 lb large shrimp (peeled and deveined)
  • 3 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 whole lemon (zested and juiced)
  • 1 whole orange (zested and juiced)
  • 3 tbsp unsalted butter
  • 0.5 tsp red pepper flakes
  • 2 tbsp parsley (chopped)
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the thin spaghetti according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta and set it aside.

Step 2

While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 3

Season the shrimp with 0.5 tsp of salt and 0.25 tsp of black pepper. Add the shrimp to the skillet in a single layer and cook for about 2 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.

Step 4

In the same skillet, reduce the heat to medium and add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
