Ingredients

  • 2 5-ounce cans canned tuna (in water)
  • 1 teaspoon orange zest
  • 3 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 stalks celery (chopped)
  • 0.25 cup red onion (finely diced)
  • 2 tablespoons fresh parsley (chopped)
  • 4 cups mixed salad greens
  • 0.5 whole sliced avocado (optional)
  • 0.5 cup sliced cucumber (optional)

Directions

Step 1

Drain the canned tuna and transfer it to a mixing bowl. Flake it gently with a fork.

Step 2

In a small bowl, whisk together the orange zest, orange juice, lemon juice, olive oil, honey, Dijon mustard, salt, and black pepper. This is your citrus vinaigrette.

Step 3

Add the celery, red onion, and parsley to the tuna. Pour the citrus vinaigrette over the mixture and gently toss everything together until evenly coated.

Step 4

Taste and adjust seasoning with additional salt or pepper as needed.

Step 5

Serve the citrus tuna salad on a bed of mixed salad greens. Optionally, top with sliced avocado and cucumber for added texture and flavor.

Step 6

Enjoy as is, or use as a filling for sandwiches or in lettuce wraps for a low-carb option.
