Directions

Step 1

Pat the sea scallops dry with paper towels. Sprinkle both sides with salt and black pepper. This ensures a good sear by removing excess moisture.

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is shimmering, add the scallops. Be careful not to overcrowd the pan.
