Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 large orange
  • 1 large lemon
  • 3 tablespoons olive oil
  • 1 teaspoon honey
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley
  • 1 tablespoon fresh mint
  • 0.25 cup Parmesan cheese
  • 0.25 cup toasted almonds

Directions

Step 1

Rinse the white rice under cold water until the water runs clear to remove excess starch.

In a medium-sized pot, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low and cover. Cook for 15-18 minutes or until the rice is tender and the water is absorbed.
